The pools are the reason to book. Cut in dark stone, they reach a rimless edge that dissolves into the vineyards and the sea beyond, so a swim feels like floating off the side of the island. Black paving stones step across the water to the suite, a woven pergola throws a lace of shade over the terrace, and a pair of low chairs waits for the hour when the sun drops into the Aegean.

Inside, the rooms trade colour for texture. Arched openings frame the view like paintings, a round mirror glows in a plastered alcove, and at dusk a wall light throws a soft halo over the window seat while the sea turns from blue to slate. The palette is almost monastic, white and charcoal and warm wood, and the effect is calm rather than cold: a place made for long mornings and unhurried evenings.
